Turkey Chili

1 lb ground turkey
2 red peppers
2 green peppers
1 small onion
1 can of kidney beans
2 jalapeno peppers
1 can of tomato sauce (15 oz.)

chili powder
garlic salt
olive oil

reduced fat cheddar cheese (optional)
low fat sour cream (optional)

1. Chop onions and jalepenos into small pieces
2. Chop red and green peppers into square pieces (about 1inch sqares)
3. Sautee onions, jalepenos, ground turkey, red and green peppers in olive oil.
4. Sprinkle with chili powder ( I use a lot of this, but do it to taste)
5. Let simmer to get all the juices flowing and then add tomato sauce.
6. Let cook over medium heat for at least 10 mins to get all the flavor infused in the sauce
7. Add the kidney beans
8. Add more chili powder until you get YOUR desired flavor
9. Serve

Again another stupid easy and fast recipe. You can serve this with sour cream or cheese as listed above...normally I do not do this but to each his/her own. It's an easy chili to be sure.

Pasta Fagioli

1 box ditalini (1 lb)
1 can of garbanzo beans
1 can of canellini beans
1 can of tomato sauce (15 oz can)

3 celery stalks
1 garlic clove

olive oil
Peccorino (grated spaghetti) cheese
salt

1. Chop up celery and garlic
2. Cook Ditalini as directed on the box (salt the water once it boils with about a tablespoon of salt)
3. In a large pot, sautee celery and garlic
4. Add tomato sauce to sauteed celery and garlic
5. Let it simmer to get the flavoring in the sauce
6. Add cooked ditalini, cannellini beans, and garbanzo beans
7. Let cook together until heat is throughout the beans
8. Add about 2 tbls. of Peccorino Cheese
9. Serve with Peccorino and use to taste

Pasta fagioli or Pasta e fagioli, meaning "pasta and beans," is a traditional meatless Italian peasant dish

This dish is STUPID EASY and FAST to make. But it tastes AWESOME! Honestly this is a family staple in our house. My mom makes it all the time and now I make it all the time. Simple, fast, Italian. To change it up sometimes I throw in an extra can of beans (Kidney beans) and add a little 8oz can of sauce to make sure there is enough juice. It's so yummy I may have to make it tonight!

Salsa Eggs

6 eggs
1 red pepper (I like how red tastes but you can use any color)
2 tbls. salsa (I use Old El Paso - Medium)
2 slices fat free cheese
2 Weight Watcher's bagels
Dollop of Skim Milk (is a dollop an actual measurement)

Tabasco (optional - I like it spicy!)
Olive Oil
Garlic Salt
Spray Butter

1. Slice red pepper into strips
2. Sautee red pepper in a medium skillet until soft with olive oil and garlic salt
3. Combine egg whites, salsa, skim milk, and tabasco (optional)
4. Cook over medium heat until eggs are fluffy
5. Place one slice of cheese on each serving of eggs (makes 2 servings)
6. Serve eggs with WW bagel toasted and topped with spray butter

I make this little dish every Saturday and Sunday for my hubby and I. It is a filling and low cal way to really get us moving in the morning. Oh and did I mention it's YUMMY!

Pepper Chicken

1 pound boneless chicken tenders
4-5 red peppers
1 can stewed tomatos
1 can tomato sauce
1 bag frozen peas
1 container of mushrooms
Olive Oil
Garlic Salt
Peccorino Cheese (or some sort of grated hard cheese goodness)

1. Slice chicken into cubes (about the size of the top knuckle of your thumb)
2. Slice peppers into strips
3. Slice mushrooms
4. Sautee chicken, peppers and mushrooms in olive oil until chicken is done and peppers are soft
5. Add garlic salt
6. Lower to Low/Medium heat
7. Add can of sauteed tomatos
8. Add can of tomato sauce
9. Let simmer about 5 to 10 minutes to get all the juices going together
10. Add the frozen peas
11. Season with Cheese to taste, generally I use about 2 tbls.

I like to let this cook sit and cook for about an hour to get all the flavors together. But, after work I will cook and serve it immediately. It's tasty either way!

This is a low point (for those following WW) filling stew like meal which the hubby and I eat about once a week. You always have leftovers as well. YUMMY!
